I base my own meal creation plans on the notion of:
- cooking once and eating twice or more.
- I make recipes with the idea of “leap-frogging” one with the other, and that means four+ meals available for eating during your busy main-meal times and/or lunches
- storing/freezing the leftovers gives you the luxury of saying “dinner is ready” in the morning, before you get to your day’s activities
For a healthy well-rounded dinner:
- just add a carbohydrate and vegetables and:
- cut-up sticks of raw veggies (celery, radish, cucumber, carrots, jicama, turnips, etc.)
- the raw sticks go well with quacamole, hummus or other healthy dips that you can make yourself or buy organic
As with any recipes, be creative if you choose!
